Baked Stuffed Shrimp

12 Jumbo shrimp
1 Onion, minced
1 Green pepper, chopped
6 Tablespoons butter,
1 cup fresh crab meat
1 teaspoon dry French mustard
Paprika
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
2 tablespoons Hollandaise
2 tablespoons flour
1 cup milk
1 tablespoon sherry wine, or more
Grated Parmesan cheese

Method:

Clean and remove heads and shells from shrimp, leaving tails. Split shrimp and open flat. Sauté onion and pepper in 4 tablespoons of the butter until soft but not brown. Add the crab meat, dry mustard, Worcestershire sauce, salt and hollandaise. Set aside.
Make white sauce using remaining 2 tablespoons butter, flour and milk. Add to crab meat mixture along with the sherry. Mix well; stuff the butter fried shrimp with the crab meat and dot with extra butter. Sprinkle lightly with Parmesan cheese and paprika. Arrange in shallow baking pan and bake at 350 degrees F for 25 minutes.

CHICKEN FRIED RICE

For 4 servings
1 tbsp refine oil
1 egg, slightly beaten
2 tbsp refine oil
1 cup chicken, finely diced
½ cup water chestnuts, finely diced
½ cup bamboo shoots, finely diced
½ cup celery, finely diced
1 cup fresh bean sprouts
½ cup Carrot finely diced
½ cup beans finely diced
½ cup frozen peas
½ cup diced mushrooms
4 cups rice, cooked
soya sauce
salt to taste
½ tea spoon pepper powder

Method:
1. Cut up and prepare all ingredients.
2. Heat wok (frying pan) up with 1 tbsp oil and fry egg into a thin sheet. Remove to plate and reserve.
Add 2 tbsp oil to wok.
3. Heat oil until almost smoking.
4. Stir fry chicken and onion together until cooked.
5. Add bean sprouts, peas, celery, carrot, beans .
6. Stir and cook for 2 minutes in covered wok.
7. Uncover wok, add vegetables.
8. Stir fry, then cook covered for 2 minutes.
9. Add cooked rice, season with salt, pepper, soya sauce. Reduce heat to medium.
10. Break up clumps of rice. Stir fry until rice has even colour and heated through.
11. Finely chop egg sheet and stir into rice. Serve.

What is cooking?

Cooking is the daily used words that everyone come across more than a couple of times on their daily life. But what does the real meaning of cooking?
The basic idea of cooking is preparing food for human consumption. The cooking process involves using a variety of methods and tools to prepare a set of ingredients so that they are digestible and have flavour. The process uses a form of scientific method and so the quantities of different ingredients and the conditions in which the food is prepared influence the resulting product. Heat is often applied to food during the process.
